From Palette to Palate at Marco Polo Ortigas Manila

Foodies have been announcing that Filipino cuisine is the next big thing. At Marco Polo Ortigas, celebrate Filipino week with their very own take in contemporary Filipino cuisine with the culinary artist, Chef Ramon Antonio.


Coming from different continents to gain his world-class experience, Chef Ramon Antonio, has been a sought-after chef and artist with his contemporary take on Filipino cuisine. His sketches adorn the ceiling of Cucina while the real deal line the counters. The flavors of the dishes stay true to their inspirations but are elevated by the technique and finesse of Chef Ramon’s skills.

Chef Ramon Antonio transforms each masterpiece from canvas to plate, such as Kinilaw Bisaya (Cebuano style mackarel ceviche), Ginataang Santol (Bicol’s santol cooked in coconut milk and mixed with camote chips), Biyaring (Maranaw-style shrimp ceviche) for appetizers.

You can also find classic ulam like Kalderetang Karnero, Adobong Puti, Igado and Bistek Tagalog. Of special note is Chef Ramon’s take on Kaldereta, slowly braising beef, adding foie gras and topped with pine nuts. He served this delectable beef dish with bugas mais or corn grits mixed in squid ink. Corn is normally sweet but he kept diners guessing on what the side was and managed to keep the flavor of the grits neutral and perfectly complement the tender beef.

Chef Ramon’s desserts are the perfect bookender to the meal. Treat yourself with sweet and earthy concoctions like tablea at luya (chocolate and ginger), masi, Napoleones sa PandanCanonigo and Barako mousse, which can compete with the best.
